Sunnyside up Egg over Bacon Cauliflower Pancake

Dice up 1/3 cauliflower (using a food processor makes this very fast and easy).  Add two eggs and 1 strip crumbled bacon.  Fry up ½ the mix using organic butter.  Top with a sunny side egg or scrambled eggs.  Add sliced avocado on top.  

Breakfast Hash

½ medium onion, ½ lbs. ground sausage, 1 clove minced garlic, 1 large yam peeled and cubed, 1 red bell pepper, 1 green bell pepper, salt and pepper to taste, any style egg added is optional.

Cook sausage over medium heat until brown, then add garlic for 1 more minute, remove mixture and set aside.  Add extra virgin olive oil to empty skillet and cook cubed yams for about 15 minutes.  Add peppers and onions until potatoes are soft.  When finished add everything together.  

Avocado Boats

1 Ripe avocado, 2 eggs, 2 slices of bacon, 1 scallion, salt, pepper.

Preheat oven to 425.  Cut avocado in half and carefully remove pit.  Slice off a small section on the bottom of each half so they sit flat.  Separate the yolks with out breaking them and put them in the hole of avocado. You may have to scoop some out then place on cookie sheet.  Fill the rest of the space in with the egg whites. It’s ok if it overflows.  Place into oven and cook for 15 minutes.  While bakingavocados cook bacon until crispy.  When done sprinkle on salt, pepper, bacon and scallions.  

Coconut, Berry, Spinach Smoothie

1 ½ cups coconut milk, 1 ½ cups cold water, 1 ½ cups frozen blueberries, 1 ½ cups frozen raspberries, 1 ½ cups baby spinach, 4 organic raw egg yokes(optional), 2-3 tsp of honey or stevia.  

Place all ingredients into blender and blend until smooth.  You may adjust sweetener to taste.  

Cassava Pancakes

3 eggs, ¼ cup coconut oil melted, ¼ cup coconut milk, 1 T honey, ¾ cup cassava flour, ½ tsp baking soda, ¼ tsp salt.

Whisk the eggs in a bowl.  Add the coconut milk, oil, and honey.  Mix well.  Cook over griddle until golden brown.  Serve with organic pure maple syrup.

Eggs - Scrambled, hard boiled, sunny side up, over easy, omelets.

Make breakfast burritos with cassava flour tortillas, avocado and salsa.

Eat with a side of bacon, avocado, tomato, sweet potatoes or any sautéed vegetable.
