Ingredients
- 1 can of kidney beans, rinsed
- 1 bulb of fennel diced
- 12 cherry tomatoes quartered
- 4 tablespoons of finely minced red onion
- 2 cloves garlic pressed
- 4 tablespoons fresh lemon juice
- 4 tablespoons chopped walnuts
- 3 tablespoons chopped parsley
- Olive Oil to taste
- salt and pepper to taste
- Chopped cilantro to garnish (optional)
Directions
- Mix all above ingredients and chill in fridge
- Salad tastes better the longer it marinates so prepare in advance of serving!
