Ingredients

  • See bean dip recipe
  • 1 can tomato sauce
  • 1 clove garlic pressed
  • 1/4 jalapeno minced
  • 1/4 tsp ground cumin
  • 1/4 tsp taco seasoning
  • 6 corn tortillas
  • 1 green bell pepper diced
  • 8 olives sliced
  • 5-6 sprigs cilantro chopped finely

Directions

  1. Place tomato sauce in small sauce pan on medium heat
  2. Add garlic, jalapeno, cumin, and taco seasoning in tomato sauce
  3. Heat and set aside
  4. Put about 1/4 cup bean dip in tortilla, roll tortilla and place in baking dish
  5. Pour tomato sauce over tortillas
  6. Sprinkle olives and green peppers on top of tomato sauce
  7. Preheat oven to 350 F
  8. Bake for 20 min at 350 F
  9. Take out of oven and top with cilantro
